Glarus roast

The Glarner Netzbraten is a specialty from the Swiss canton of Glarus .

In contrast to normal roasting , not a piece of meat is prepared, but roast meat made from veal and pork, which is wrapped in a net and tied with a string. Today the net mostly comes from the abdominal wall of the pig.
