Grünkäse or green cheese is a name for various types of cheese with a green or blue-green color ("blue cheese", "blue green cheese"). The terms are used to designate types of cheese with mold on the inside as well as for green seasoned cheeses , especially Schabziger (“Green Swiss”, “Swiss green cheese”), sage cheese (“Sage cheese”) and other types of cheese.

The term “green cheese” is differentiated from “green cheese”, which is used to name a sheep's cheese from the island of Texel of the same name called Texel or “Groene kaas” .
