As a spice or herb cheese are cheeses referred to by spices or herbs flavored. These spices can be used with all types of cheese, for example with semi-hard cheese , soft cheese or cream cheese .

Typical, partially used for centuries culinary herbs mainly include coriander , cumin , dill , oregano , sage , herbs clover , fenugreek , mint , various peppers , thyme , pine nuts , forest cress and numerous others. The main spices used are cumin , caraway, chili powder , cloves , paprika , pepper, curry , garlic , chives , wild garlic and onions .

The herbs and spices are sometimes included in the name of the cheese types. Cheeses with caraway are accordingly known as caraway cheese , fromage au cumin or caraway cheese , and there is also sage cheese or sage cheese (like Sage Derby , with sage), kominje kaas (with cumin), and pepato (with pepper ), the queso enchillado (with chili) or simply the name herbal cheese for the Schabziger and other types of cheese. In the case of clove cheese also several names such as exist Nagelkaas and Nägele cheese , which go back to the naming of the clove as "nail" or "Naegeli".
