After completing a two-year apprenticeship as a winemaker, he began studying viticulture and cellar management at the Geisenheim University of Applied Sciences (today: Geisenheim University ). He continued his studies in 1983 after successfully passing his diploma in the branch "General Plant Biology" (Plant Biology) at the University of California, Davis . His research interests are primarily the ecophysiology of grapevines . In addition to the gas metabolism, the relationships between drought stress and root growth are the focus of his work. The aim of his investigations are “yield” and “environmental adaptation”.

In 1993, Schultz successfully applied for a globally advertised position as a scientist and post-doctoral candidate of the German Research Foundation at the Institut national de la recherche agronomique of the École nationale supérieure agronomique de Montpellier for two years .
