Hibernal is a cultivated apple variety that was first mentioned in the United States and Russia in the 1870s to 1880s . The tree came to Central Europe from Russia. In Germany, the variety is used as a stem-builder in fruit tree refinement because of its frost hardiness and its even upright growth . He is also known by the synonyms Orsimoi , Orsimui , Osimoe and Romna .

The undemanding, strongly growing apple tree has an expansive, broad pyramidal crown. It prefers a full sun on moderately dry to fresh soil. He is hardly susceptible to disease. Due to triploidy , the apple tree cannot produce seeds and therefore needs pollen donors . It blooms from late April to mid-May. The relatively large fruits can be harvested in early September, but rarely fall from the tree. That is why they can be kept until January.

The relatively large to very large apple reaches a height of about 65.5 mm with a width of about 84 mm and a weight of up to 200 g. This means that the fruit is wider, its shape is roughly irregular, stem-bellied and the surface is waxy and rough. Both the calyx and stem pits are wide and medium deep. Medium to long, broad, upright leaves protrude from the large, open calyx. The deep, wide calyx cavity is conical to frustoconical. The medium-sized core is in the middle of the fruit, the walls are crescent-shaped.

The basic color of the Hibernals is white-yellow to yellow-green, the color of ripeness is slightly to medium-strong orange to brown-red flamed. The apple is slightly rusted , especially flat in the area of ​​the stem pit. The delicate, medium-firm, coarse but juicy flesh is white to cream-colored, greenish-veined and has a sour, strong taste.

In Germany, the variety is used as a stem-builder in fruit tree refinement because of its frost hardiness and its even upright growth . However, due to the increasing temperature fluctuations in late winter, the tree has lost more and more of its frost resistance, which is why its advantages as a trunk-builder compared to other apple trees are decreasing. The apple harvest usually promises a medium to high yield. The fruit pulp is used to make must or juice , but distribution is of little economic importance. The apple is also popular for baking.
