Russetting is a collective term for corked cells on the surface of the fruit of pome fruit .

Russeting results from injuries to the fruit skin. Depending on the type and time of the injury during fruit growth, different forms of russeting can arise. Possible causes are climatic conditions such as precipitation or frost. Gall and rust mites such as apple rust mites , yeasts and apple powdery mildew can also cause russeting. Rust fungi, on the other hand, do not trigger the russeting because they do not affect the fruit, but other parts of the plant. There are different types of apples for which russeting is typical, such as the Osnabrück Renette or the Gray Autumn Strenette . With such varieties, a certain amount of russeting is not a quality defect .
