A lumberjack steak is a steak that is cut from the neck or shoulder of the pig into 1 to 1.5 cm thick slices. The rind , like the inner bone , is left on the meat . The rind increases the fat content of the steak, which means that the meat does not dry out as it is roasting and is especially suitable for grilling .

In addition to pepper and salt , typical spices also include ground caraway seeds , garlic and paprika powder .

The lumberjack steak is usually served with onions fried in strong beer or wine .
