Huarache (from the Purépecha language kwarachi , ' sandal ') is a dish used in Mexican cuisine . The name refers to the shape of the sandals used by the indigenous people of the Purépecha . According to Luis Alberto Vargas Guadarrama of the Instituto de Investigaciones Antropológicas of the National Autonomous University of Mexico , although corn has been the basis of nutrition in Central America for millennia , the huarache is an invention of the 20th century. Allegedly, the dish was invented in 1935 by Carmen Gómez Medina, who ran a food stall in Mexico City .

The dough made of nixtamalized corn flour , water and lard is kneaded, shaped into a ball, pressed together to form an oval flatbread and baked on both sides on a hot oven plate. The flatbread is topped with beans, meat, vegetables or cheese, and salsa .
