illycaffè SpA is a global group that is active in the areas of coffee production and distribution and specializes in the production and worldwide distribution of coffee for espresso production.

The company, based in Via Flavia 110 in the north-eastern Italian port city of Trieste , was founded in 1933 by the Hungarian coffee trader Francesco Illy and belongs to the family holding Gruppo illy SpA .

history

Francesco Illy was, among other things, a product developer and designed the so-called Illy Illeta , an apparatus that is considered to be the forerunner of all espresso machines common today . With the patented inert gas technology, he succeeded in preserving the ready-to-trade coffee while retaining all the aromas and ingredients. Metal cans are enriched with inert gas (the remaining air is replaced by inert gas under pressure) and sealed after filling.

Ernesto Illy (* 1925 in Trieste; † 2008 ibid) was a chemist by profession and after graduating from university he joined the company, which he headed from 1963 to 2004 as president. He then became honorary president of Illycaffè S. p. A. and held this office until his death. Ernesto Illy, who increasingly focused on scientific research and technology, founded the first laboratory, which became the site of numerous inventions and patents. Illycaffè currently holds 17 patents in various areas of coffee processing and preparation.

The company is now in its third generation as a family business and has a chair in coffee processing at the University of Trieste . Of the 700 employees worldwide, 400 work at the headquarters in Trieste, where all production facilities are located and all products are packaged; the other locations are primarily responsible for sales and administrative tasks.

Technology and market orientation

Illy also develops modern processes with which coffee beans are automatically sorted according to color and degree of ripeness or in the environmentally friendly processing of raw materials. The Research & Technological Development (RTD) division operates two large laboratories, AromaLab and SensoryLab . The two facilities are located in Trieste and are dedicated to the analysis of the ingredients and aromas contained in coffee and the preparation of psycho-physiological taste studies.

For coffee production, Illy only uses Arabica varieties from the high altitudes of Brazil . The heavily roasted coffee is very low in caffeine with its 1.5 percent caffeine.

Because of the complex manufacturing and control procedure and the use of high-quality raw materials, Illy coffee is comparatively expensive and only poorly represented by the end consumer. Illy primarily supplies cafes , bars and catering establishments as well as companies and offices.

Illy espresso can be prepared with standard espresso machines and fully automatic coffee machines , there is also an easy-to-use and low-maintenance system with pre-portioned coffee pods (so-called Cialde , where 6.5 grams of ground coffee are pressed between two thin special filter sheets ), for which special machines are offered. The Francis Francis division, which is also part of the Illy Group ! produces espresso machines for commercial and home use.

Around the world, between two and five million cups of Illy coffee are drunk every day. Illy is internationally regarded as the leading top brand in the espresso product segment . In almost all comparative tests , Illy was the most convincing in terms of taste and was the top choice among the testers. The Stiftung Warentest also awarded Illy the top position in a competition test with other established providers.

In Switzerland , Illycaffè is marketed under the trademark Amici , as the naming rights in Switzerland belong to the former partner Illy Café , from whom Illy Caffè separated in the 1960s.
