Juan Mari Arzak (born July 31, 1942 in San Sebastián ) is a Spanish chef who is known for the new Basque cuisine .

biography

After the death of his father in 1951, his mother turned his grandfather's tavern into a restaurant, which he took over in 1966 after graduating from hotel management school. At the age of 34, Arzak was considered the best chef in Spain. With Maite Espina, Juan Mari Arzak has two daughters, Marta and Elena. In 1994 he founded the Tezka restaurant in Mexico City . He has been running the Arzak restaurant in San Sebastián since 1995 with his daughter Elena Arzak .

style

Juan Mari Arzak is considered a pioneer of the new Basque cuisine. He calls his style author cuisine, regional products with foreign flavors. The “laboratory” is located on the upper floor of the restaurant, where around 50 new dishes are developed each year.
