Kitfo
Kitfo ( Amharic : ክትፎ ) is a dish from the Ethiopian cuisine .
Word origin
Kitfo is derived from the Ethio-Semitic root ktf and means "chop up".
Characteristic
Kitfo originally came from the kitchen of the Gurage and is made of beef mince produced in the mitmita and Nitir qibe marinated with Berbere and cardamom flavored. Kitfo can be eaten raw ( tire ) or lightly cooked ( leb leb ). Typically, it is used together with Awaze and Ambasha or Injera eaten, the Ethiopian flatbread.
Health aspects
The inadequate availability of high-quality beef in terms of health and hygiene has led to many people in Ethiopia contracting worms from eating raw meat . For some years now, there has been a trend to replace beef with goat meat , which is harmless to health.
