The Klitscher , also Ardäppelklitscher , are a potato dish from the Ore Mountains .

In this dish, a special kind of potato pancakes , raw or boiled potatoes are grated; in contrast to other potato pancakes, no yeast , no grain flour , no herbs, no other root vegetables are used. Klitscher can contain onion , cottage cheese , buttermilk , sauerkraut, and caraway seeds . In contrast to the grimace , they contain egg . Klitscher are often served with sweet side dishes ( apple sauce , sugar ) but also with lamb's lettuce (ore: Rawinzeln). Klitscher are fried on both sides in fat, often linseed oil , and the size of a palm.

Klitscher that do not contain raw potatoes are also known as golden Klitscher . If these contain no other ingredient besides boiled potatoes, they are also called Rauchemaad in the Ore Mountains . Klitscher that contain sauerkraut are also called sour Klitscher . Klitscher, which only contain raw potatoes, are also called green Klitscher .
