Crab butter

Crab butter ( Beurre d'ecrevisse ) is a mixture of butter and crushed shells of crayfish . It is mainly used to refine dishes based on fish and seafood .

Crayfish butter is made in the traditional way by first grinding the shells of cooked crayfish very finely and mixing it with about the same weight of butter until the butter foams. Then the mixture is poured through a sieve into a saucepan with water and the crab butter that has solidified is removed after it has cooled completely. According to more modern recipes, heating is dispensed with and the cold Krebs-butter mixture is brushed directly through a hair sieve.

Crab butter is also available as a commodity .
