Kulesch

Kulesh or Kulisch ( Ukrainian Куліш , Russian Кулеш ) is a Ukrainian national dish . It is a porridge made from grain and other ingredients. It is served as an intermediate course in the classic menu sequence , but is also known as an independent dish.

There are several preparations:

In the east and south-east of Ukraine, cereals (e.g. millet ) and potatoes are used to make a porridge, which is refined by adding fried bacon and onions .

In the west ( Carpathians / Hutsuls ), a porridge made of flour and water is cooked, which is covered with sheep's cheese and butter after cooking .
