L'Etivaz
L'Etivaz is a village on the Torneresse , which belongs to the political municipality of Château-d'Oex in the Swiss canton of Vaud . According to him, a Swiss is AOC - cheese named.
The village
The village consists of a church built in 1584, a chapel, around ten hamlets and several alpine meadows. In the 13th century the population was still German-speaking. The Reformation was adopted in 1555 and the parish that still exists today was established in 1713. In 1714 a thermal bath was created, and in 1934 a cooperative cellar for the maturation of alpine cheese.
The cheese
L'Etivaz cheese is a traditional alpine cheese , which means that the spicy alpine milk is not transported into the valley, but the raw milk is processed on site over a wood fire and according to strict guidelines. It is a hard cheese from the Vaudois Alps and it has a pronounced aromatic, spicy-fruity taste with a slightly nutty note. The requirements of the variety organization include: raw milk from the farm, in-house whey (culture) and rennet powder, only wood fires are permitted, almost no holes. All ingredients must be guaranteed to be free from genetically modified substances.
In 2000, L'Etivaz was the first Swiss cheese to be entered in the Federal Register of Designations of Origin and Geographical Indications (AOC).
