Lutefisk

Lutefisk ( Danish ludfisk or ludefisk , German 'lye fish' , Finnish lipeäkala , Norwegian lutefisk , Icelandic lútfiskur , Swedish lutfisk ) is a traditional Nordic fish dish. It is a further processing of the dried fish . Lutefisk is a typical Christmas meal.

Lutefisk is a dried fish, usually cod, soaked in a liquor made from beech or birch ash (today caustic soda is mostly used) . During this rehydration process, the dried fish takes on a gelatinous consistency. The fish is then rinsed and prepared. The lutefisk is served with boiled potatoes, pea puree, flatbread , fried bacon , pepper and melted butter as well as plenty of aquavit .
