Melba toast (also toast Melba ) is a very dry, crispy and thinly sliced ​​type of toast that is served with soups and salads or is topped with either melted cheese or pâté . It is named after the Australian opera singer Nellie Melba (1861–1931). The term is believed to originate from 1897 when the singer became seriously ill and the melba toast was part of her diet . The toast, like peach melba , was created by the chef Auguste Escoffier , an admirer of Nellie Melba. The hotelier César Ritz probably coined the name during a conversation with Escoffier.

Melba toast is made by lightly toasting slices of bread in the traditional way; As soon as the outside of the toast is slightly firm, it is removed from the toaster and cut lengthways with a bread knife so that two thinner slices are created. These two slices are toasted again.
