Msemmen (from Arabic سمن, DMG samn  'clarified butter') is a traditional Maghrebian dish that is prepared in a square shape from flour , semolina , cooking oil ( olive oil , sunflower oil or rapeseed oil ), butter , water, yeast and salt in a pan .

It is mentioned in Darren Humphrys' Morocco travel guide as one of the most frequently used foods and described as "thin, oily, flat bread", which is eaten for breakfast, among other things. In a report in the Revue de'l Orient de l'Algérie et des Colonies from 1853, the dish is also described as one of the usual dishes belonging to a "collation à la façon des Arabes" and as a kind of " crêpes frites dans le beurre ”. Elizabeth Warnock Fernea states in a glossary for her book A Street in Marrakech that Msemmen are “fried pancakes; literally, "the buttered ones" ".

The dish can be enjoyed hot or cold, for breakfast or in the afternoon or as dinner, with a sweet or salty topping (olive oil, honey, nougat cream, eggs). In Morocco, the pastries are often consumed during the fasting month of Ramadan and also serve as the basis for various other dishes such as rfissa or mahjoba , an Algerian variant with a spicy filling made from onions, peppers, tomatoes and minced meat. Msemmen is comparable to the Paratha of Indian cuisine , both in terms of production and taste .
