Smen (from Arabic سمن or سمنة- also called sman , semn , semneh or sminn ) is an important part of North African cuisine . It is fermented and salted butter and is similar to the Indian ghee and the Ethiopian niter kibbeh .

Manufacturing

Smen is made from cow, sheep or goat milk or a mixture of these types of milk. Typically, smen is made in a clay pot called khabia , where it matures in a dark place. This maturation process can take up to 15 years. Smen often with thyme refined and tagine , msemen and couscous served. The taste is compared to that of Gorgonzola . In Europe, Smen is often made by melting down finished butter.
