Mujdei

Mujdei is a Romanian garlic sauce.

To prepare, peel the garlic cloves and cut them into slices. These are mashed together with table salt , lemon juice , oil and possibly chilli pepper . This pasty mass is then stirred up with hot water. By pouring the hot water over the garlic, the bitterness is removed. The use of the liquid alone gives every dish an intense garlic aroma. It is used as an addition to meat, fish, vegetables or mămăligă . Often in Romania the garlic is then infused with hot meat broth or Vegeta is used instead of salt. There are numerous variations of the preparation, including with sour cream, tomatoes, or aioli style .
