The Pale Cream is a fortified wine from the Andalusian wine-growing regions of Marco de Jerez , Montilla-Moriles , Málaga and Condado de Huelva .

The pale cream with its light gold color has an alcohol content between 15.5 and 22 percent by volume and is made from a mixture of dry wine and sweet wine. It is one of the liqueur wines from the Olorosos group, a variant of sherry . The sugar content is between 45 and 115 grams per liter. The grapes used to make it come from the white Spanish  grape variety Pedro Ximénez .

The liqueur wine Pale Cream is especially served with starters such as traditional tapas and is used in Andalusian cuisine to prepare foie gras and pies. However, it is also served with fresh fruits such as pears for dessert. The recommended serving temperature is between 10 and 12 degrees Celsius.
