Pedro Ximénez [ ˈpedɾo xiˈmeneθ ] is a Spanish white wine variety whose grapes have very high sugar values (→ must weight ); it rounds off the cream sherry taste. It is mainly grown in Andalusia and, next to Palomino, is the second most important grape variety for sherry. It is also part of Málaga wine . Pedro Ximénez is a variety of the noble grapevine ( Vitis vinifera ). It has hermaphroditic flowers and is therefore self-fruiting. In viticulture , the economic disadvantage of not having to grow male plants that produce yield is avoided.

Allegedly, the name of Pedro Ximénez derives from a Spanish soldier of the 17th century who is said to have brought her to Spain from the Netherlands. Another reading is that, according to R. Köster, a Peter Siemens from the Rhine Valley and soldier of Charles V brought the grape variety to Spain in the 16th century and that today's spelling is a corruption of the German name.
