During his employment at the University of Montpellier École nationale supérieure agronomique de Montpellier (ENSAM) , Galet took over the management of the chair of viticulture there . In the following years of his activity at the institute, Galet was trend-setting in the field of ampelography.

From 1952, Pierre Galet introduced a new scientific approach to his subject. As a renowned ampelographer, Galet had established contacts around the world, including beyond political borders. Research trips also took him to Afghanistan, Nepal, North Africa, North America, South America, South Korea, Thailand and Cyprus, where he assessed wild vines and hybrids on the basis of their phenotype . In 1967 he finally published his doctoral thesis with the title Recherches sur les méthodes d'identification et de classification des Vitacces des zones tempérées . As part of this work, he described and systematized the wild vines, which he recorded and assessed over the years.

For his globally recognized achievements he was awarded the title " Officier de l'Ordre du Mérite Agricole " and numerous other honors.

His work Dictionnaire encyclopédique des cépages from the year 2000, edited by Hachette , is considered the standard work for the description of grape varieties ; In particular, it contains precise illustrations of the characteristics of the grape varieties.
