Paprika sauce is a strong sauce of classic cuisine that is served with meat and fish dishes , mutton kidneys , frogs' legs and the like.

For preparation, soup greens and ham are first cut into small pieces with bay leaf and clove, sweated in butter , cooked with a brown base sauce and then strained . The resulting sauce is supplemented with sour cream and richly seasoned with paprika .
