Pie spice

Pate spice is a classic spice mixture for pies and terrines of all kinds. The mixture of spices from all over the world made the pies, which have been valued by the nobility and clergy since the Middle Ages, even more luxurious since the 14th century.

An exemplary composition is: 15 parts white pepper , five parts allspice , two parts mace and one part each of clove , bay leaf , marjoram , nutmeg , rosemary , sage and cinnamon . All ingredients are finely ground and mixed.

Pie seasoning is also available as a commodity.
