Pectin methylesterase

Pectin methylesterase (abbreviation: PME, EC  3.1.1.11 , also: pectin demethoxylase, pectin methoxylase ) is a common enzyme in the cell wall in all higher plants as well as some bacteria and fungi which splits the methyl esters of the pectins and thereby forms polygalacturonic acid and releases methanol . PME has been isolated in many isoforms .

Research has shown that PME plays a role in many physiological processes, e.g. B. in the ripening of fruits, the shedding of leaves ( abscission ), the elongation growth of plant cells and in the formation of roots.

use

PME is z. B. used in food technology to ensure uniform product quality.
