Phaseolin (also: Vicilin , Pha v allergen) is the main reserve protein of the bean species (genera Phaseolus and Vicia ), for example also the kidney bean ( Phaseolus vulgaris ). It is a mixture of several glycoproteins that is formed during seed development. It has a share of 30% -50% in the semen proteins and acts as an allergen in humans .

construction

Phaseolin consists of three different proteins (alpha, beta, gamma). All three subspecies are glycoproteins that are bound via N-glycosidic bonds . They belong to the so-called 7S storage proteins .

use

Phaseolin is able to inhibit the activity of the enzyme α-amylase, which is responsible for the breakdown of carbohydrates. Plant extracts containing phaseolin are used because of this nutritional-physiological property in food supplements and medical products and are the subject of various patent applications.
