Pill cake , also Pillekooken , Pillekauken , Pinnekuchen , Pinnekeskuchen or Leinewebers pancakes , in the northern Rhineland also Schnibbelskuchen , a kind of potato pancake , is one of the specialties of the cuisine of the Bergisches Land .

The pill cakes differ from many other types of potato pancakes in that they are mostly pan-sized.

preparation

For preparation, potatoes are cut into thin strips, layered in a pan, seasoned with salt , pepper and nutmeg and cooked in fat. You can also sauté and steam cubes of smoked bacon and onions beforehand. Finally, a pancake batter made of flour , eggs and a little water or milk is added and everything is baked on both sides until crispy.

Alternatively, for the smaller variant, raw potatoes are grated (roast size) and mixed with eggs, salt and a little flour to thicken them in a bowl. This dough is shaped into hand-sized cookies and fried in hot fat in a pan.

Pill cake is often served with lettuce , endive or lamb's lettuce as a side dish.
