Mushroom powder is a powder made from dried, crushed or ground edible mushrooms without any other ingredients, which is used as a spice for soups and sauces .

For production, mushrooms and mushroom residues are usually of different types - unless they are rotten or rotten - first cut into small pieces and dried until they are brittle and fragile. Then the pieces are finely crushed in a mortar or otherwise mechanically ground to powder. When packed airtight, mushroom powder can be kept for years. Unlike dried mushrooms , it does not need to be soaked or cooked for a long time to develop its aroma.

According to the German food book, commercially available mushroom powder may have a water content of no more than 9 percent by weight and a proportion of acid-insoluble ash of no more than 3 percent by weight.

Mushroom powder in capsules, as a pressed tablet or loose powder made from so-called vital or medicinal mushrooms are also offered on the European market as dietary supplements. Here, the unprocessed mushrooms are dried and ground into powder. Particular caution is required here for allergy sufferers, as the powder can contain " fungal spores , fungal dust, heat-sensitive hydrogen cyanide and polysaccharides and fungal toxins". The Federal Institute for Risk Assessment (BfR) points out in its report "Fungi Risk - Assessment and Advice" that even edible mushrooms that have not been thermally treated can become the cause of asthma , rhinitis , contact dermatitis , allergic alveolitis and food allergies .
