Pule (Serbian for donkey foal ) is a Serbian cheese made from the milk of donkeys .

Manufacturing

The milk required to make the cheese is obtained from the 300 to 500 Balkan islands living in the Zasavica nature reserve ( Vojvodina ). The Balkan donkeys are almost extinct, another small population is only known in Montenegro .

The donkeys are milked by hand three times a day and the milk is finally processed in a complex process. Each donkey gives around 200 milliliters of milk. 25 liters of milk are required to produce one kilo of cheese. This corresponds to the daily milk quantity of 125 animals.

Appearance and taste

The coil is shaped like a truncated cone and weighs 50 g. It is a white, crumbly cheese. In terms of taste, it is compared to Spanish Manchego cheese, which, however, tastes less strong.

With its low fat content of 1%, donkey milk is considered very healthy. In addition, the vitamin C content is 60 times higher than normal cow's milk. Donkey milk is very similar to human breast milk .

Prices

Due to the laborious milking process and the small daily production volume, the price of the milk per liter is 40 euros. This results in a kilo price of 1,000 euros, making Pule one of the most expensive cheeses in the world.

Trivia

As Stern reported in December 2012, tennis player Novak Ðokovic bought the 2013 annual production in order to be able to offer the Pule cheese exclusively in his restaurant chain.
