Queso Tetilla ( Spanish , [ 'keso te'tiʎa ] or Galician Queixo Tetilla ) is a traditional Galician semi-hard cow's milk cheese with a protected designation of origin ( "Denominación de Origen Protegida", DOP ).
The name means "small female breast" and indicates its pear-shaped appearance, which it receives from the drip process. The word stem is Germanic and is the same as that of the words "Titte" and "Zitze". In the German translation, the cheese is sometimes called "bosom cheese".

The creamy cheese is pale yellow and has a mild taste. The consistency is yielding under finger pressure. It matures for two to three months and contains only 25% fat in the dry matter . Milk from the Frisona , Pardo Alpina and Rubia gallega cattle breeds is used for the Tetilla . A cheese wheel weighs 0.5 to 1.5 kg with a diameter of 90 to 150 mm and a height of 90 to 150 mm. The rule for the dimensions of the tetilla says that the height should be greater than the radius but smaller than the diameter.

In addition to a quince paste called dulce de membrillo , it is the second component of the popular Galician dessert “Queixo / Queso con Membrillo”.

Tetilla cheese was originally only produced in the border area between A Coruña and Pontevedra , but cheese from all over Galicia can now be called tetilla, provided that it meets the requirements of the regulations. A popular tradition gives the following reason for the origin of the Tetilla for Santiago de Compostela :
Queen Saba is located opposite the prophet Daniel in the glory portal of the cathedral of Santiago. Allegedly, his smile is aimed at her cleavage . An archbishop is said to have once noticed that this cleavage was too lavishly furnished, so he commissioned stonemasons to flatten the breasts. The outraged reaction of the Compostelan citizens is said to have been the production of the cheese in the shape of a breast.
