The Xiuzhuan ( Chinese  修 馔 ) section of the book Quxian shenyin shu ( Chinese  臞 仙 神 隱 書  /  臞 仙 神 隐 书 , Pinyin Quxian shenyin shu  - "" Record of the Skinny Hermit "") by Zhu Quan (朱 权 / 朱 權) (1378–1448) from the time of the Ming dynasty , which is often also called Shenyin (神) for short , provides important information on food processing and is an important source for the history of Chinese eating and drinking culture.

The Quxian shenyin shu comprises 4 juan. Because the author was the seventeenth son of the first emperor of the Ming dynasty and the emperor gave him the title Ning wang (宁王) and he was given the posthumous honorary title "xian 献" after his death, he is called in historical works about the Ming -Dynasty "Ning xian wang 宁 献 王". In his last years Zhu Quan referred to himself as “Quxian 臞 仙” (ie as a skinny hermit), which is why the book about the trivialities of everyday life of the reclusive and self-cultivation practitioner is called “Quxian shenyin shu” (臞 仙 神 隐 书; "Book of the Skinny Hermit") called.

Arranged according to the lunar months, it records how to plant trees, how to grow flowers and fruits, vegetables and medicinal herbs, and methods of food processing are described.

In the Xiuzhuan (修 馔; "Food Processing") section, more than 150 processing and preparation methods for products from agriculture and peasant ancillary trades are reported. It mainly describes the production of jiang products (soy sauce, etc.) and vinegar, the candying of fruit, the production of certain cheese-like dairy products, fish marinated in rice wine pomace, the pickling of crabs, the curing of meat, the production of melon pickles. It's very practical. The content is partly cited from older works such as the Nongsang yishi cuoyao (农 桑 衣食 撮要) and the Jujia biyong shilei quanji (居家 必 用事 类 全集).

His section Guītián zhī zhī (归田 之 汁) is also of interest for the history of Chinese food and drink culture.

Zaju author

Two zájù arias ( Chinese  雜劇  /  杂剧 ) have also been passed down by Zhu Quan : the piece Chongmozi dubu daluotian (冲 漠 子 独步 大 罗 天 "Master Chongmo ascends to Daluo heaven alone"), also known as Daluotian大 罗 天 for short , and the Zhuo Wenjun siben Xiangru卓文君 私奔 相 如 "Zhuo Wenjun runs away with her lover [Sima] Xiangru", also called Siben Xiangru私奔 相 如 for short . Both are contained in the Guben Yuan Ming zaju孤本 元 明 杂剧 ('Compendium of zaju- Arias of the Yuan and Ming times').
