Rotisseur

A rotisseur ( French : rôti , roast) is the name given to the roast cook in a kitchen brigade . He is responsible for the preparation of all kinds of roasts, stir-fries and fried foods.

In small to medium-sized catering establishments, this work is often taken over by the saucier .

At German royal courts, the roast master was part of the court.
