Raw mass

In food production, the raw mass is the mass from which the finished food is later made.

For example, the raw mass of milk chocolate consists of milk , cocoa , lecithins and sugar . Often for reasons of ripening, the raw mass is a so-called "primary raw mass", for example a cheese wheel or sausage mass, in which the sausage to be produced first has to be smoked.
