Roujiamo

Roujiamo or Rou Jia Mo ( Chinese : 肉夹馍; pinyin : ròujiāmó; literally: "marinated meat"), also known as rougamo , is a snack dish that originates from the cuisine of Shaanxi Province and is common throughout China.

Overview

The meat is often pork , which is steamed for hours in a soup with over 20 spices and spice blends. While it's possible to use just a few spices (which many food stalls do), the resulting meat is less flavorful.

But there are also many alternatives. For example, in Muslim areas in Xi'an , the meat is usually made from beef (seasoned with cumin and pepper), and in Gansu Province it is often made from lamb . The meat is then chopped and filled with “Baijimo”, a kind of flat bread . An authentic Baijimo is made from a wheat flour dough with yeast and then baked in a clay oven. Today, in many parts of China, the Baijimo is made with a pan, which gives a taste that differs significantly from the original clay oven-baked version. Depending on the type of spices used to cook the meat and the way the bread is made, the taste of roujiamo can vary widely from take-out to take-out.

Roujiamo is considered the Chinese equivalent of the western hamburgers and sandwiches . Roujiamo could be the oldest sandwich or hamburger in the world, as the bread or "Mo" is from the Qin dynasty (221–206 BC) and the meat from the Zhou dynasty (1045–256 BC .) originates.
