Cheesecake (also quark Sahnetorte ) or Austrian upper cup cream cake is a cream pie having a bottom from light sponge or lighter Wiener mass . Their typical filling is a cream with curd (Easter. Mousse with curd ). According to the guiding principles for fine baked goods , cream cakes contain at least 20 percent cream . Exceptionally, the designation as "cream cream ..." is not legally required, which would otherwise be the case for the designation of cream cakes with a cream content of less than 60 percent.

The Dutch cheese cream cake has a base made of puff pastry and the surface is decorated with fondant glaze .

preparation

A cream cheese cake usually consists of two bases , the whipped cream preparation is spread in between, the upper base is divided into pieces, placed on top and dusted with decorative powder.

Quark, sugar, lemon or rum flavoring are usually added to the whipped cream preparation and they are bound with gelatine.
