Sour kidneys is a traditional dish of the southern German, Saxon, Rhenish and Westphalian cuisine.

To prepare it, the pork kidneys are first washed thoroughly, then cut into fine strips and soaked in milk for a long time to neutralize the odor of urine. Then they are briefly fried in butter and removed from the pan. Then some flour is roasted brown in the roasting set , boiled through with meat stock and seasoned with salt , pepper , vinegar or lemon juice and possibly caraway seeds. Depending on the recipe, smoked bacon can also be added. Finally, the kidneys are warmed up in the sauce, but no longer boiled, and served with a side dish such as bread dumplings or mashed potatoes .
