Schlüterbrot

Schlüterbrot is an easily digestible mixed rye bread with wholemeal character, which contains about 25% Schlütermehl and about 10% wheat flour.

Manufacturing

Schlüter flour after Schlüter method produced which in 1890 by Theodor Schlüter in Dresden develops and in the subsequent years of the Schlüter bread factory was sold.

In the production of Schlütermehl, the bran , which is normally indigestible, is treated with steam under pressure in order to make the cell structure friable and thus to make the nutrients contained in the bran ( aleurone protein , soluble minerals and vitamins ) more accessible. Remnants of adhering starch are broken down into dextrins. Because these caramelize during the subsequent drying process, the Schlüter flour is dark brown. Roasted and aromatic substances are created and the water absorption capacity is increased.

This special treatment makes the bran better usable and the result is an easily digestible, finely chopped, brown, sweet rye bran flour - the Schlüter flour.

Schlüterbrot has a very dark crumb color and, in addition to the components of wholemeal bread, also has its other advantages in the form of long freshness and - due to the very high fiber content - digestive effect.

Due to the high water absorption capacity of Schlueter flour, the bread is very soft and hardly has a crust.
