The distillery was founded in 1585. This makes it the oldest (according to other sources the second oldest) distillery in Germany. It produced in an outbuilding of the Schlitzer brewery until the 20th century before it finally moved to its current location.

In 1969, in connection with the Karlshof as a state domain , the formerly count's property became the property of the State of Hesse. In 2006 the distillery was sold and converted into a GmbH. Today's owners are the towns of Schlitz (90%) and Hünfeld (10%).

In total, the distillery produces over 35 different spirits; In addition to Schlitzer Korn, Burgen-Kümmel, noble liqueurs, fruit juice liqueurs, herbal liqueurs, noble fruit brandies and a whiskey are produced and sold nationally under the brands Feinbitter, Schwarzwilderer, Bruder Bernhard, Rhönwurz and Gastric Bitter Boonekamp. Herbs and mostly local fruits such as sloes, blueberries, lemons, cassis, woodruff, raspberry, cherry and orange are used for this. The products - since 2008 also in organic quality - have already received several awards from the DLG . In addition, the raspberry brandy was awarded the title “world class, top level, 5 stars” in the international tasting competition. Since 2012, the company has been offering castle vodka in line with demand.

Every two years a grain queen is elected as the “representative of the Schlitzer distillery and the city of Schlitz”.
