A chocolate fountain is a device used to present and process melted chocolate . It can be used to coat fruits or other foods with a layer of chocolate, similar to a chocolate fondue . Chocolate fountains are often used as eye catchers at trade shows and other events .

history

In 1989, a chocolate fountain was set up as part of a chocolate exhibition in Gürzenich in Cologne. This exhibition was the forerunner of today's Chocolate Museum in Cologne, where a fountain has stood since the museum was founded. A chocolate fountain was developed in 1991 by a Canadian company for industrial use. After initially hesitant buying interest, the fountains grew in popularity after other companies began production. At the end of 2004, the first chocolate fountain for private use came on the market.

functionality

Liquid chocolate is conveyed upwards from a heated basin by means of a screw conveyor through a vertical cylinder placed in the center of the basin . The chocolate emerges through the side openings on several levels in the cylinder and flows outwards over umbrella-shaped plates. From the edges of the attachments, the chocolate falls like a cylindrical curtain over the lower attachments and back into the basin, from where the cycle begins again.

Used chocolate

Couverture , a chocolate base with a high proportion of cocoa butter , is primarily used in chocolate fountains . The fat content ensures that the chocolate mass flows evenly. Alternatively or additionally, the raw mass can fluiditätserhöhende additives such as vegetable oil are added.
