Swedish rosehip soup

The Swedish rosehip soup ( Swedish Nyponsoppa ) is made from rosehips without seeds, sugar and potato flour as a thickening agent. Milk or cream is also added to achieve a fuller taste. Rose hip soup can be made from both dried and fresh rose hips. The rose hips are crushed and strained. Pre-cooked rosehip soup or rosehip powder, which must be dissolved in water, are available in stores. The sweet soup is usually consumed hot or cold in a soup plate or in a glass as a starter or dessert. Banana slices, macaroons, almond biscuits, whipped cream or vanilla ice cream can be found in the soup.

Due to the rose hips, the soup contains a very high content of vitamin C and also to a lesser extent of vitamin A and beta-carotene .
