Scotch Bonnet
Scotch Bonnet is a Caribbean cultivated form of the chilli variety Capsicum chinense . The name is the English name for a tartan hat and alludes to the shape of the fruit.
Plant and fruits
The plant grows as a bushy shrub and is 120 cm high.
Unlike most chilies, the fruits are wider than long and clearly grooved. The initially green fruits change color from yellow to orange-red as they ripen. Along with Habaneros and the Indian Bhut Jolokia, they are among the hottest chillies in the world and achieve a heat of 150,000 to 300,000 units on the Scoville scale .
Taste and use
In addition to their extreme heat, fresh Scotch Bonnet chillies have a characteristic fruity apricot-like taste that is not found in any other chilli variety. The fruity note is destroyed during cooking. Uncooked and freshly prepared, Scotch Bonnets are a typical ingredient in spicy Caribbean dishes. Especially in sauces, they are often used together with tropical fruits such as papayas or mangos .
