Sfoglio polizanno

Sfoglio (from Italian sfoglia = puff pastry ), also Sfoglio polizzano , is a cheesecake from Polizzi Generosa ( Sicily ) . It consists of a sweet shortcrust pastry that is filled with a mixture of tuma (a Sicilian, not fully ripe Pecorino cheese), dark chocolate, cinnamon, sugar and egg white as a binding agent. According to actor and cookbook author Vincent Schiavelli , the cake was developed in the Benedictine convent of Santa Margherita in Polizzi Generosa in the 18th century and was originally made with cocoa instead of dark chocolate.
