Stall smell

As stable smell of typical odor is in a stable designated by the combined analysis of gas chromatography and olfactometry as a very complex flavor turns over 400 chemical compounds relative to one another in different concentrations (odor intensity). The main components of the stable odor are p -cresol (4-methylphenol), trimethylamine and butyric acid .

Figurative sense

At the same time, the term is used to describe the odor palette of wines and wine defects , with a similar meaning to "horse sweat" or "horse saddle". This describes off-smells, the so-called board off-notes , which are mostly caused by the Brettanomyces bruxellensis yeast and belong to the “animal” aging note, which is not typical for wine.
