Strapačky with sauerkraut

Strapačky is a Slovak national dish , also known in Hungary as Sztrapacska ( strapačky = halušky (Pl.)), Which is often served as a side dish or as a separate course after a soup and is very filling. The name comes from the Slovak word strapatý ( scruffy, tousled ).

In the basic recipe, Strapačky consist of a kind of spaetzle or nocken made of raw, grated potatoes, egg and wheat flour, which are mixed into a dough, then either brought into boiling water by hand or with a cam sieve and cooked there. Strapačky and Sztrapacska differ locally or at will with various ingredients such as fried bacon, sheep cheese , sour cream , sauerkraut or onions . In Slovakia in particular, the word strapačky can only refer to sauerkrautnocken, which can also be called kapustové halušky .
