The beginnings of today's school go back to the year 1862, when a “further education school” was set up in Bitburg. This was attended by students after elementary school in preparation for further training. In 1921 the “advanced training school” became a commercial school , in which vocational elements were in the foreground. The year 1921 is therefore the actual year of foundation. Eight years later, the commercial school was recognized by the state. The bombing raids in 1944 destroyed most of the school grounds. Two years later, teaching was resumed and in 1948 the school was expanded into a district vocational school . A year later, due to lack of space, the lessons were held in a hall of a Bitburg restaurant. In the same year it was decided to build a new school building, which could be occupied in 1954. An extension to the school became necessary in 1974, which was inaugurated in December. In September 1999 the inauguration of another new building, the "branch office", took place. In 2000, after the approval of the Simon family, the general conference, the district council and the Trier supervisory and service department, the Bitburg vocational school was renamed "Theobald-Simon-Schule".
