Dosa or Dosai ( Kannada : ದೋಸೆ dōse [ d̪oːse ], Malayalam : ദോശ dōśa [ d̪oːɕa ], Tamil : தோசை tōcai [ d̪oːsɛi̯ ], Telugu : దోస dōsa [ d̪oːsa ]) is a dish of the South Indian cuisine . Dosa is a type of pancake that is traditionally cooked on a cast iron plate. It consists of a fermented dough made from rice and native beans , which is also used for the popular Idli . Dosa is usually consumed for breakfast . Dosa is usually served with sambar (a sauce based on lentils and tamarind ) and chutney , typically made from coconut .

In addition to the simple form, there are numerous dosa variations. The best known include masala dosa , which is served with a spicy potato filling, the particularly thin and crispy paper dosa and rava dosa , which is made from wheat semolina in contrast to the normal dosa . A similar dish is Uthappam , which is fried from the same batter but as a thicker flatbread and usually topped with tomatoes, onions or other ingredients. In Telugu it is also called "Attu". Pesarattu is the most popular dosa from the Andhra Pradesh region , made from Mungdal.
