Tqemali
Tqemali ( Georgian ტყემალი ; tʼqʼɛmɑlɪ ) is a hot and sour sauce that is very popular in Georgia and is made from boiled cherry plums and with various spices (e.g. coriander , dill , garlic or hot peppers ). Both the ripe and unripe fruits can be used as the main ingredient, which then leads to a red or green sauce. Tqemali is very often served as a cold sauce with potatoes or meat dishes. Usually, they are kept in the refrigerator after production.
Word origin
Tqemali ( Georgian ტყემალი ; tʼqʼɛmɑlɪ) is the short form of ტყემლის საწებელი (tʼqʼɛmlɪs sat͡sebeli), d. H. "Sour sauce / sauce from cherry plum ", which is the predominant preparation. Sour sauces are also made from alutscha (ალუჩის საწებელა, alut͡ʃis sat͡sebela), sour cherry (ალუბლის საწებელა, alublis sat͡sebela) and cornel cherry (შინდის საწებელა, ʃindis sat͡sebela). The term "Tqemali" is increasingly being used in Georgia as a generic term for "sour sauce".
