Vada describes a wide variety of fried preparations in Indian cuisine that are widely used as a side dish, starter or snack and are typically eaten with sambar and chutney .
Variations
Batata Vada
Batata Vada, originally from Gujarat , describes Vada made from a spicy potato mixture, wrapped in a dough made from chickpeas, which are fried in spherical shapes in hot fat and eaten with chutney.
Dahi Vada
Dahi Vada is made from (Medu) Vada, which after deep-frying is first placed in water and then in lightly sweetened and, if necessary, seasoned yogurt .
Masala Vada
Masala Vada, which are particularly widespread in Tamil Nadu in southern India , are made from chickpeas, onions and various spices, such as fennel seeds , ginger , green chillies and curry leaves . Typically, Masala Vada are served with a sweet milk tea or coffee with chutney.
Medu Vada
Medu Vada consist of a dough made from ancient beans and are fried in a ring in hot fat. This variation is widespread in India and is often served as a side dish, for example with Idli or Dosa .
Rasam Vada
Rasam Vada, originally from Tamil Nadu, is (Medu) Vada, which is served in a thin, sour-spicy soup called Rasam .
Sabudana Vada
Sabudana or Sago Vada can be assigned to the cuisine of Maharashtra and consist mainly of pearl sago. This is made into a dough together with potatoes, ground peanuts, green chillies and fresh coriander leaves and baked in a spherical shape floating in fat.
Vada Pav
Vada Pav is a snack or chaat of Maharashtra cuisine, which is particularly common in Mumbai . It is a vegetarian burger consisting of a batata vada in a soft bun (pav), which is served with chutney and green chillies.
