Welfenspeise

Welfenspeise is a two-layered dessert consisting of a white, boiled milk - vanilla - cream is, is raised by the very stiffly whipped egg white foam. After cooling, a yellow layer of wine cream made from beaten egg yolk , white wine and a little lemon juice is put on top .

The Welfenspeise got its name after the colors of the noble family of Welfs (white / yellow) and is considered a culinary specialty from Lower Saxony . It was invented by a Hanoverian cook and was first served on the 200th anniversary of the throne of the ruling house of the Guelphs. It is said that it should have become the favorite dessert of Elector Ernst August .
